Cauliflower Curry with Beans

Quick, easy and tasty!

This easy, hearty curry features tender cauliflower and protein-rich beans, all simmered in a rich, aromatic sauce. Recipe is adapted from Vegan Cocotte and serves 3.

Ingredients

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 1 bell pepper (any color you like), diced

  • 2 garlic cloves, finely chopped

  • 1 tablespoon fresh ginger, finely chopped

  • 2 teaspoons ground cumin

  • 1 teaspoon ground coriander

  • ¼ teaspoon cayenne pepper (or more if you like things spicy)

  • ½ lb cauliflower florets, cut into bite-sized pieces

  • 1 can (14 oz) cannellini beans

  • 1 cup tomato sauce

  • ½ cup water

  • 1 handful fresh cilantro, roughly chopped

Instructions

  1. Heat the olive oil in a large, deep pan and sauté the onion and bell pepper for 3-4 minutes over medium heat.

  2. Stir in the garlic and ginger and continue to cook for another minute until fragrant.

  3. Next, add the ground cumin, ground coriander and cayenne pepper and cook for 1-2 minutes.

  4. Add the cauliflower florets and toss well to cover in the spice mix.

  5. Stir in the beans, tomato sauce and water and bring to a boil, then lower the heat and simmer for 15 minutes, covered with a lid.

  6. Stir in the fresh cilantro, season to taste and serve over quinoa or rice or with warm naan bread. Enjoy!
