Jackfruit fajitas - amazing!

Jackfruit: you'll think you're eating meat, but it's vegan and healthy!

I just discovered jackfruit. When you pull it apart, it has the texture of pulled pork or shredded chicken. I bought Trader Joe’s canned green jackfruit in brine – it has virtually no flavor, so takes on the flavor of whatever seasonings or sauces you use. The taste and texture of the fajitas was great and just like chicken fajitas. Recipe adapted from The Healthy Kitchen. Serves 4.

UPDATE: Trader Joe’s has discontinued this product, unfortunately. I tried ordering the Native Forest brand on Amazon. Hopefully it will be just as good!

Ingredients

  • 1 tablespoon oil (optional - sauté in broth or water for no oil)

  • 20 ounce can young green jackfruit in brine or water, NOT in syrup

  • 1 onion sliced

  • 1 red bell pepper sliced

  • 1 green or yellow bell pepper sliced

Fajita Seasoning:

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • ½ teaspoon dried oregano

  • ½ teaspoon sea salt or to taste

  • ¼ teaspoon cayenne or chipotle pepper (use more for spicier fajitas or omit for mild fajitas)

Serve with (optional):

  • whole wheat or corn or sprouted tortillas

  • guacamole

  • black beans or refried beans

  • salsa

  • vegan crema fresca or sour cream

  • fresh cilantro

  • lime quarters

Instructions

  1. Drain your jackfruit and use your hands to pull apart the chunks to resemble shredded chicken. Use all the pieces, even the slightly harder core bits, no need to toss any of that out.

  2. Add the oil (if using) to a pan and over medium high heat, sauté the jackfruit until lightly browned, approx. 8-10 minutes.

  3. Then add the veggie slices and ALL the seasoning and sauté an additional 2-3 minutes until the peppers are tender crisp. Do not over cook. Remove from the heat and serve with tortillas and toppings of choice.

Notes

  • Make sure to use young green jackfruit canned in water or brine. Do not sub for fresh jackfruit, dried jackfruit that comes packaged and seasoned, or canned jackfruit in syrup.

  • Serve the jackfruit fajitas unassembled and let everyone make their own. The tortillas will get soggy if assembled too far in advance.
