Romanian polenta

This vegan version of mamaliga includes nutritional yeast for that cheesy flavor. Makes a great side dish with Romanian mushroom stew (recipe here). Adapted from jamiegeller.com. Serves 4-6.

Ingredients

  • 3 1/2 cups water

  • 1 cup polenta

  • 1/4 cup nutritional yeast

  • 1 tablespoon vegan butter

  • Salt to taste

Preparation

  1. Bring water to a boil.

  2. Gradually dribble in the polenta and the nutritional yeast, stirring with a wooden spoon to avoid any lumps.

  3. Add the vegan butter, then continue stirring for 10 to 15 minutes until you have a thick pudding with a cooked taste. Add salt as needed. You can add more water if it feels too thick.

  4. Serve immediately and enjoy!
