Mujadara - Middle Eastern lentils and rice

Switch things up with Middle Eastern flavors

I love this flavor combination, and I love mujadara with just about anything! Serve it with salad or raw vegetables with tahini sauce. Or with Middle Eastern “mezzes” (such as carrot salad, red cabbage salad, pickled vegetables). Or any kind of vegetable you want. I recommend bright colored items to contrast with the brown mujadara. The photo is for inspiration from Feel Good Foodie. Makes about 8 servings.

Ingredients

  • 2 cups brown or white rice

  • 1 cup lentils

  • 3 tablespoons olive oil

  • 2 small or one large onion, chopped

  • Salt and freshly ground pepper to taste

  • 1 teaspoon cumin, or to taste

Instructions:

  1. Cook rice according to package instructions. If using brown rice, remember that it takes around 50 minutes.

  2. Cook lentils (cover with water to about an inch over the lentils, bring to boil, simmer for approximately 25 minutes until tender, but still retain their shape).

  3. While rice and lentils are cooking, heat oil and fry onion slowly to golden brown (will take around 20 minutes).

  4. Mix onions with rice, add salt, pepper and cumin, then gently fold in lentils. Enjoy!
