Strawberry Banana Ice Cream

Made with just three ingredients!

This vegan "ice cream" recipe is made with frozen bananas, strawberries and a splash of plant-based milk. Enjoy this frozen dessert on its own or top it with shredded coconut, fresh fruits, chocolate or nuts. Recipe is adapted from Nourished by Caroline and serves 2.

Ingredients

  • 2 large bananas, sliced and frozen

  • 1 1/2 cup strawberries, frozen (or other frozen fruit such as mangoes, blueberries, raspberries or pineapple)

  • 2-3 tablespoons full-fat coconut milk, or plant-based milk of choice

Instructions

  1. Start by slicing 2 bananas and storing them in an airtight container in the freezer overnight or for at least 12 hours.

  2. Prepare the recipe: In a food processor, add the frozen bananas and strawberries. Process until the mixture is crumbly. Add the coconut milk, 1 tablespoon at a time and process until the mixture is creamy. Stop to scrape the sides as needed. It might take a few minutes to get a creamy ice cream consistency.

  3. Serve immediately by itself or with toppings of choice. Enjoy!
