Tofu meat sauce

Tastes like the real thing!

Baking the tofu crumbles with spices until they’re dry and then adding tomato sauce creates the taste and texture of actual meat sauce (well, probably closest to turkey meat sauce). We had it on spaghetti and I’m planning to try it on sloppy Joes next. Recipe adapted from It Doesn’t Taste Like Chicken. Serves 2.

Ingredients

  • 1 block (approx.. 14 oz. drained) firm tofu

  • 2 tablespoons nutritional yeast

  • 2 tablespoons soy sauce

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon chili powder

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1-2 cups tomato sauce (jar or homemade) - depending on how saucy you like your meat sauce

  • 8 oz. whole wheat spaghetti or pasta of choice

Instructions

  1. Preheat your oven to 350F (180C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl mix the nutritional yeast, soy sauce, olive oil, and spices. It will make a brown paste-like texture. Break the tofu into a few large chunks and add them to the bowl, then use a potato masher to mash the tofu into crumbles. Stir the tofu crumbles well making sure all the tofu is evenly coated in the spice mix.

  3. Spread the tofu crumbles evenly over the prepared baking sheet. Bake for 35 - 40 minutes, stopping to stir the tofu every now and then. Keep a close eye on it towards the end so that it doesn't burn. You want the tofu to be nicely browned. The smaller crumbles will be darker than the larger crumbles, and that's good because it will provide a variety of texture to the meat sauce. Remove from the oven and set aside.

  4. In the meantime, heat the tomato sauce, and cook pasta according to package directions. Stir the tofu into the sauce, and heat through. If you find the sauce is too thick, stir in a bit of water until desired consistency is reached. Serve over hot pasta. Enjoy!
